  • Craig’s career in coffee started near to 20 years ago. A curious mind, his interest in the product was never going to rest upon the surface...

    2018 - Current - Director, Criteria Coffee (Melbourne, Australia).

    Criteria Coffee is Melbourne's leading co-roasting facility, education space and boutique coffee supplier. A hub for coffee excellence, members come to learn the craft of coffee (roasting, sourcing, evaluation) under Craig's expert guidance for their business or brand.

    As Founder and Director, Craig leads the Criteria team of staff and roasting members, sharing his vast coffee knowledge to facilitate success within the coffee roasting (and wider) community.

    Simultaneously, under the brand 'Criteria Coffee by Craig' he applies his extensive sourcing and roasting skills to create seasonal coffee offerings, working closely with direct trade relations and import partners to uphold a transparent and equitable coffee supply chain. Craig's coffee is distributed globally through a wide network of wholesale and retail markets, with offerings for small batch production through to large scale volume and contract supply.

    2019-Current. De’Longhi. Australian Ambassador.

    Representing De’Longhi’s domestic coffee machine category. Craig provides ongoing advice on product development, testing and design innovation through consumer-focused evaluation. Craig also works closely with the De’Longhi marketing teams, creating opportunities both locally and globally for sales growth and customer engagement.

    2007-2018 - Veneziano Coffee (Melbourne. Australia)

    During his 11-year tenure at Veneziano, Craig played an integral role in the development and success of the company's coffee program. As a key member of the roasting department, he worked across coffee production, sourcing (in country), and quality control and contributed to the company’s high-volume growth. In his final appointment as the Head of Coffee Research and Development, Craig worked closely with major supermarket retailer Aldi Australia to develop their Australian pod offering and whole bean range.

    2018 - Mahlkonig. Product Research Advisor. (Zurich, Switzerland)

    Craig's technical advice has been sought globally by leading coffee equipment brands, including Mahlkonig. In 2018 Craig travelled to Switzerland where he shared his professional advice and recommendation on new and existing product designs.

    2010 - Current. Diedrich Roasters USA. Brand Advocate and Education Lead.

    For more than a decade Craig has worked closely with Diedrich roasters. Having consulted for Diedrich (USA) on the thermodynamics of the roast system, and presented his knowledge to many equipment owners/roasteries and individuals looking to perfect their roasting skills.

    Helping fellow coffee professionals navigate the coffee competition circuit, past clients include Anthony Douglas (WBC Champion 2022), Tom Balerin (French Barista Champion 2019), Jade Jennings (Australian Barista Championship Finalist 2016, 2017), Jen Marks (Australian Lattè Art Champion 2011)

    As a certified Q Grader (2011) and Instructor (2016), Craig has successfully delivered over 25 courses to both national and international students.

    Craig has assisted brands across the country to innovate and rethink what coffee quality can be. Previous clients include, Aldi (Germany), De’Longhi (Australia/Italy). Jas Blu (China), Detpak (Australia/UK), Diedrich (USA), Mahlkönig (Switzerland), Climpson & Sons (UK).

  • In his former music career, Craig developed many skills and traits that shine today in the coffee profession, including technicality, creativity, focus, and a desire to deliver high-quality results.

    Craig attained a Bachelor of Music Performance from the Sydney Conservatorium of Music in 1999, and went on to become the drummer for Australia’s renowned jazz outfit the James Morrison Band from 2002 to ’07. Craig performed twice at the National Jazz Awards (achieving second place in 2003). Craig has played with industry greats; Branford Marsalis, Bob Berg, Claire Martin, Barbara Morrison (amongst others). His performances have supported the Australian creative music scene as a 'first call' sessional Drummer with his music shared on countless stages across the globe. As his mentors gave to him, Craig has passed on his learnings to many students over the years.
